The Story:
Finca La Luisa, a 70-hectare estate nestled at 1,750m in Ciudad Bolívar, is renowned for its innovative processing methods and dedication to quality. Producer Juan Pablo Vélez combines tradition with experimentation to craft truly unique coffees, and this lot is no exception.
Using double anaerobic fermentation, fresh peaches are introduced to the process, creating a distinct and entirely new level of fruitiness. Following fermentation, the cherries are honey processed, allowing the natural sugars to enhance the coffee's complexity. Dried carefully on raised traditional "African" beds to reach the ideal (12%) moisture required for stability in shipping
