When we first started roasting in the dark depths of 2020, we stumbled upon a coffee from a Nicaraguan producer "Claudia Rivera". It was a natural process Red Catuai. We roasted and cupped it immediately, we got strong tasting notes of of strawberry sauce and vanilla and from that moment on, the bar was set. This was the coffee from which all other coffees would be judged.
We got the exact same feeling when this coffee arrived at our roastery...

The Story:
This nano lot from the El Felix plot highlights the Red Catuai varietal, carefully dried on raised beds using the natural process. The result is a coffee that embodies the unique terroir of Nueva Segovia, an area known for its high altitudes, mist-shrouded forests, and exceptional coffee-growing conditions.
Finca El Bosque, located in the lush hills of San Fernando, is a testament to the Peralta Family’s dedication to specialty coffee. Purchased in 1992 by Julio Peralta, the farm spans 162 hectares of pristine forest and cultivated coffee plots. In 2008, the Peralta brothers shifted their focus to specialty coffee, pioneering innovative processes and meticulous attention to detail.
This is our first coffee from The Peralta's at Finca El Bosque, and I have a feeling it won't be our last.
