From Manuel Armando Peralta’s Finca Los Jilgueros in Nueva Segovia, this single-plot microlot is 100% Java — a rare Pacas × Maragogype hybrid that gave birth to the famed Pacamara variety. Known as “elephant beans” for their unusually large size, these cherries undergo extended anaerobic fermentation before slow raised-bed drying, amplifying intensity and clarity. The Peralta family, pioneers in Nicaraguan specialty since 2008, continue to innovate with exceptional precision.
