We roast these coffees in micro small batches and release one per month to maximise freshness and really push how special each of these coffees truly are. 
(basically, these coffee are far too special to have wastage, and although Fran and I have a whale of a time polishing off the "scraps" in the roastery, it's not a habit that is commercially viable...)

You're buying from real people, who you will be introduced to month by month. For the farmers that produce this coffee at origin, it's life, and the fruits of their generations of knowledge, attention and passion will be delivered to you to savour at home.

Each coffee will have a private brew along video to give you our take on how to brew at home to get the best out of them. We've made the mistakes in bulk and pass on the pure knowledge to you all.

With the first roast starting in April for delivery in the middle of the month, here is a brief summary of each coffee you can expect to look forward to.

APRIL

ICE PROCESS - SCA 88+
From Felipe Arcila in Colombia, Pink Bourbon varietal. We are kicking this series off BIG with a Super Experimental fermentation. Details are as follows;
‣ Dry Anaerobic fermentation for 24h
‣ Transfer to sealed container for 50h at below 22ºC to extend
‣ Freeze coffee for 72 hours to stop further fermentation 
‣ Transfer to dry on raised beds below 35ºC to allow aeration and achieve ideal moisture content of ~12%

MAY

B73 WINE PROCESS - SCA 88.5
From Brazil's Cutting Edge Ipanema Farm, we have a Yellow Bourbon Dry Anaerobic Fermentation. The weather is getting warmer and this coffee is absolutely exquisite as a COLD BREW (or brew it up and add a dark spirit for the best "cocktail" you've ever had...!
This coffee comes from the highest nano plot on the Rio Verde farm just north of Rio de Janiero and is subject to levels of care that are practically unheard of, even in speciality coffee. 
When it reaches us, the coffee is as fresh as is physically possible due to their nitrogen flushing AND vacuum sealing of the product. It's worth noting that we do not get any coffee that is both Nitrogen Flushed AND vacuum sealed - which is a telling story of the quality of the operation at Ipanema. Exceptional coffee, and named 100% appropriately.

JUNE

SL28 Extended Fermentation  - SCA 89+
If there were ever a coffee to encapsulate the collaboration and collective will of the global community, it's this one.
August's coffee is grown in Colombia, by a farmer named Felipé. He had a plot of land, high up on his farm where nothing would grow. Though the soil was fertile, and the land was rich with nutrients, the days were unbearably hot and the nights were bitterly cold. Felipé had all but given up on this plot, until he met a Kenyan farmer who gifted him some SL28 seeds (An African varietal that thrives in the conditions Felipé was fighting).
The trees flourished, and produced deep red cherries from their 3rd year. 
The result is this SL28 (Africa) grown on Colombian soil, and roasted in Honley (UK...!)
This is such a special coffee and export yield is low making it rare. We are super thankful to our friends at Cofinet for securing this lot for us and we can't wait to share it with you in August.

JULY

STRAWBERRY MACERATION - SCA 89+
Yes! Literal strawberries from a neighbouring farm are thrown in to the fermentation of this coffee. 
It's from Colombia, with a fruit ferm technique pioneered in Colombia by uniquely driven coffee farmers such as Sebastian Ramirez and Jairo & Felipe Arcilo.
Further information TBC, but we have sampled this lot and it is absolutely going to blow you away.

AUGUST

PEACH & PASSIONFRUIT  - BEAR SCORE 90+!
If you liked last month's strawberry thing, you're going to love this!
We take 2 individual lots, and blend them with a 3rd brazillian lot (for balance) and create something that is the most special coffee we've ever done. 
From the genius minds that brought you the Strawberry Maceration, Jairo, we present the Peach & Passionfruit ferm for August's Top Shelf Coffee of the month.
Absolutely unlike anything else as a cold brew, and a flavour explosion as V60, this is for sure our highlight of the year. We can't wait to hear what you think of it.
